Red Wine Ice Cubes

Some may laugh at the thought of leaving a quarter of a bottle of red, but for some it’s a very common weekly event. So why not put those grapey dregs of goodness to great use and fill an ice cube tray with them – try to do this when not tiddly for less spillage. Time: 5 Minutes Makes: 1 serve Equipment: Large Mug Small plate Microwave Fork Ingredients: ½ cup chopped fresh spinach 1 teaspoon chopped Parsley 1/3 cup small macaroni elbow noodles (uncooked) 1/2 cup water 1/4 cup milk of choice 1/2 cup finely grated cheddar cheese Pinch sea salt Pinch black pepper Method: Microwave macaroni, salt and water on full power for 2 minutes and stir (place mug on a plate to catch overflowing water). Every night we go to bed with the best intentions for the day ahead, but sometimes snooze gets whacked or life simply gets in the way. So begin your day the right way with these easy digestive starters. Even if the sun isn’t shining, plop a couple into a hot cuppa or your two litres of daily water. Time: 2 Minutes + freeze time Makes: 12 Cubes  Equipment: Lemon Squeezer Ice cube tray Freezer Ingredients: 6 Fresh Lemons (Reece) 12 Fresh Mint Leaves (Reece) Method: Squeeze all the lemons into a jug. Matcha Banana Bread

Ingredients 3 tbsp matcha powder2 very ripe bananas1 ¼ cup gluten-free flour blend¾ cup almond flour1 tbsp baking soda2 large eggs1 teaspoon vanilla½ cup melted coconut oil¼ cup coconut sugarPinch salt Method Preheat the oven to 180°C. Spray coconut oil into a bread loaf pan. In a mixer, add all wet ingredients and mix. Slowly add in dry ingredients a little at a time. When the dry ingredients are mixed, increase the speed to medium for one minute. Pour the batter into the loaf pan and bake 25-30 minutes until done. Serving suggestion:Dollop of Greek yogurt or ricotta and honey.

Almond Butter Chews

Time 15 balls Serves 10 minutes Ingredients ¼ cup almond butter¼ cup brown rice syrup1 cup millet (puffs or puffed brown rice cereal)¼ cup raisins Method First melt your almond butter if it’s not drippy by placing it in the microwave for about 15-20 seconds. Then, transfer into a medium sized bowl and add brown rice syrup and mix. Add millet puffs and raisins and mix until it becomes one big almond chew.Taking about 1 tablespoon of mixture into your hands, roll to form a ball. If you’re having trouble getting things to stick, add a bit more brown rice syrup 1 tablespoon at a time.
